A great match with slow-cooked shoulder of lamb or braised rabbit with olives and herbs.
A rich and intense aroma of black cherry, licorice and toasty oak. Ripe plum, Rosémary and vanilla characteristics on the poised palate with smooth, yet powerful tannins. Notes of leather and spice on the finish.
Grapes are harvested from a combination of premium vineyard sites, of old and new vines, planted in terraces between 100 to 700M above sea level. The fruit is fermented in 1.5 ton open top fermenters and hand plunged daily. Each parcel is matured separately for 12 months in a combination of both new (70%) and older (30%) French oak barriques.
