Food Match

Drink with grilled meats or pasta dishes with meat or spicy sauces.

Tasting Notes

A warm, richly flavored red with aromas of plums, dried fruits and brown spices. On the palate it's generous with good concentration of ripe plum and black cherry fruit and hints of dried figs, liquorice and dark chocolate. All balanced by fresh acidity.

Production

Produced from the local Primitivo variety cultivated in the Salento peninsula of the Puglia region, southern Italy. Grapes are sourced from the selected vineyards between 20 to 60 years old and hand harvested in early September. Fermentation took place between 82º to 86ºF with daily pumping over and ten days of contact with the skins. After malolactic fermentation the wine was matured for six months in large Slavonian oak casks before bottling.
