The Chenin Blanc grape variety originally hails from the Loire Valley before it was planted near Limoux in the Haute Vallée de L'Aude.

Best to pair this wine with a nice herb-roasted dish or a seared tuna with kimchi. Soft-shell crabs with a lemon aioli or a nice red snapper with a mango sauce.

Tasting Notes

A bright, lemony and densely fruity ensemble which has a long-lasting and thought-provoking finish, smooth ("lisse") as silk ("soie").

Production

This ripe yet crunchy fruit gives this wine it's freshness, vigor and spine, at the same time it's luscious texture which is further complemented and enriched from one third vinified and matured for nine months in seasoned French oak barrels.
