Tasting Notes

The 2016 Simoné shows citrus on the nose with hints of lemongrass. The palate is crisp on the entry with nuances of marmalade, and focused yet creamy texture.

Production

Grapes were harvested by hand and pressed directly into 500L of French oak barrels. Some whole grapes were added to the ferment. Fermentation commenced spontaneously. The lees were frequently stirred up during barrel ageing. Blending took place after nine months, after which the composed blend was aged in tank for another four months. Bottling took place after 13 months.
