How it's made
In a little village called Saint Georges d’Orques in the south of France, 10km inland from Montpellier. The village has existed since ancient times but its name first appeared in the eleventh century referring to St. George’s exploits (depicted as the mounted knight on the label!). Legend has it that a young Christian officer in the Roman army stopped off in the area, which was being terrorized by a dragon. We have got to know Laurent Icard at the liltingly-named Domaine de L’Olibet and have worked with him on his wines over several years. This rosé was made in the press, we used no saignée from his red wines, and have deliberately kept it on its fine lees to nourish the wine over the winter and spring to give the wine body
and texture. The result is a wine of fragrance and ‘delicatesse’.

The perfect summer lunch wine; pair with roasted vegetable tart or poached trout salad.
Tasting Notes
Delicate, sweet spice aromas lead onto a palate which is immediately soft, vinous and round with abundant ripe fruit, lifted by a natural zing and finishing with a characterful texture and richness.
